
As the Executive Chef at The Leadership Center, every meal I plan comes with its share of unknowns. But preparing for Husker Harvest Days 2025—our very first time as a food vendor—takes “unknown” to an entirely new level.
Think of it like throwing a backyard bash or hosting a big dinner party. You invite guests, a few say “yes,” a few say “sorry, can’t make it,” and you add a little cushion when you buy your groceries. Easy enough, right?
Now scale that up to 130,000 attendees—the crowd Husker Harvest Days welcomed in 2024. Of course, not everyone eats at the same time, not everyone picks the same food vendor, and decisions are swayed by all sorts of things:
- How long is the line?
- Which food stand is nearby when hunger strikes?
- What sounds good in the moment?
- What did someone say was “a must-have” yesterday?
- And, of course, what’s the weather like?
Then add another layer: we’re the new guy on the grounds. Will people know we’re there(yes there is a map and app)? Will they be curious to try us out? And the biggest question of all—will they want a Prime Rib Sandwich?
These are the things I’ve been mulling over for months as we prepare for this massive three-day event. Every detail matters:
- How should we lay out the lot?
- Where should the tent go?
- Where does the food truck fit best?
- How do we balance not running out with not over-preparing?
Each day service begins at 9:00 a.m., but my team and I will be in at 6:00 a.m. sharp—prepping, staging, and getting everything ready for the perfect serve.
Yes, it’s stressful. Yes, there are unknowns. But one thing I do know? It’s going to be EPIC. I can’t wait to meet and serve the hardworking farmers, ranchers, and ag professionals who come to Husker Harvest Days.
